Kale chips are perfect for a quick and satisfying snack or side dish full of healthy goodness.
1 bunch kale or chard
1 Tbsp extra-virgin olive oil
1 Tbsp sherry or rice vinegar (optional)
Sea salt to taste
1. Preheat the oven to 250 degrees. Tear kale into large pieces, stripping and discarding the stems as you go. Wash pieces and dry with a tea towel or salad spinner. In a large bowl, whisk together the olive oil and vinegar. Add the kale and use your hands to massage the dressing in for one full minute, or until the kale softens and all pieces are well coated.
2. Arrange the kale in a single layer on one to two sheet pans. Sprinkle generously with salt. Bake until crisp, about 12 to 15 minutes. Serve immediately or let cool.
Makes 3 to 4 servings
