Huckleberry Black Pepper Sorbet
This sorbet is a winner! Created by Chef Will Leroux, Corporate Chef at the Wayfarer Restaurant & Lounge in Cannon Beach, Ore., whose very favorite berry is the huckleberry, it uses the spices from black pepper to bring out the earthiness of the huckleberries. He claims it tastes delicious with lemon flavored shortbread cookies. Try it and let us know what you think!
3 cups huckleberries
Juice of 1 lemon
1-1/4 cups sugar
1 teaspoon cracked pepper
2/3 cups water
1 egg white
Heat the water in a saucepan, stir in the sugar and cook until the sugar dissolves, remove from heat. Add the huckleberries, lemon juice and pepper to the warm syrup. Puree and chill.
When mixture is cool add egg white and process in an ice cream machine as you would ice cream.
Makes 1 pint
