Agua Fresca de Zucchini-Cucumber

Agua fresca are typically flavored by a combination of fruits, grains, floral edibles or seeds, then sweetened and mixed with water to create a simple and refreshing beverage. This version won an agua fresca contest in Jalisco.

1 cup sugar
1 gallon distilled water
1 medium zucchini
1 medium cucumber, peeled
Juice of 2 limes

1. Simmer one cup sugar and one cup water until sugar dissolves. Take off heat and set aside.

2. Blend zucchini and cucumber in a food processor or blender with two cups water until thoroughly pureed.

2. Pour zucchini-cucumber mixture into a pitcher and add remaining water, lime juice and simple syrup to taste.

3. Serve over ice.

Makes one gallon
