Tofu Dengaku (Broiled Tofu with Miso Sauce)

misoINGREDIENTS:

3 tablespoons dashi or water
2 tablespoons sake
2 tablespoons mirin
2 tablespoons sugar
13 cup red miso
2 blocks firm Ota Tofu

STEPS:
Preheat broiler.
Mix dashi, sake, mirin, sugar and miso in a saucepan.
Simmer on low heat, stirring constantly until thick.
Set aside.
Slice tofu into 2 x 1 x ½ inch rectangles.
Place tofu pieces on a greased or foil-lined baking tray.
Broil for 2 to 4 minutes, watching closely, until golden brown.
Generously lather miso sauce on the tofu pieces and broil for one to two minutes, until topping is browned.
Serve immediately.
