Pumpkin Seed Gremolata

Ingredients
- 1/2 cup toasted Styrian pumpkin seeds, chopped
- 2 ea garlic cloves, minced
- 1 tablespoon Shallot, minced
- 1 bunch Italian parsley, chopped
- 1 teaspoon Aleppo Pepper Flake
- 1/2 cup Olive Oil
- 1 tablespoon toasted pumpkin seed oil
- 1 lemon zested (Microplane for zest is best)
- 1 tablespoon lemon juice
- Pinch black pepper, freshly ground
- To taste Kosher salt
Instructions
- Using a whisk, combine all ingredients in a small bowl. Adjust seasoning with Kosher salt to be highly seasoned.
- A bit more lemon juice may be necessary to balance all the oil. If preparing the recipe in advance, reserve the lemon juice and add just before serving to prevent the parsley from turning brown.
