  • orange sweet potatoes
  • rice oil for frying
  • cumin, salt and paprika to taste


  • Using a peeler, peel strips of orange sweet potato, rinse multiple times to release starch, pat dry,
  • Lightly fry in rice oil until golden crispy, season with cumin, salt and paprika
  • Garnish dish with fresh tomato, charred onion, hot chili oil, cilantro and fresh jalapeño
